Mushrooms in the garden: beds and mulch

In short

  • Wine caps grow in fresh hardwood chips or straw, in a layer 15–20 cm (6–8 in) deep, in part shade.
  • Spawn 0.5–1 kg per m² (1–2 lb per 10 sq ft). Set up from April to June or in September; first mushrooms in 2–5 months.
  • A bed lasts 2–3 years if you top it up every year with 5–10 cm of new chips or straw.
  • Pick them young, while the cap is closed or just opening, and always cook them well.
  • Wild mushrooms also grow in mulch. Pick only one that has every feature of your species, plus a spore print. Everything else goes on the compost.
