In short
- 1 L of wine takes roughly 1.3–1.5 kg of grapes; 100 kg of grapes gives 65–75 L of wine.
- Pick sound grapes when sugar stops rising over two readings: roughly 19–22 °Brix for white, 21–24 for red.
- Fermenting 100 L of must gives roughly 5 m³ of carbon dioxide. Ventilate the cellar, don't go in alone, don't lean over the vat.
- Sulphite: roughly 8–10 g of potassium metabisulphite per 100 L of must, then at every racking according to measurement.
- Always top up demijohns and barrels to the neck. Selling wine needs registration and analysis; check with the competent authority.
