In short
- Elder is a woody shrub with drooping berry clusters; danewort has upright flower heads and clusters and is poisonous.
- Elderflower cordial: 10–15 flower heads, 1 L water, 1 kg sugar, 1 lemon, 10–15 g citric acid.
- Heat the finished cordial to 85 °C (185 °F), fill it hot into hot bottles and give it 10 minutes in a water bath.
- Elderberries only ripe, off the stalks and always cooked; never raw or green.
- Strain rosehips twice through fine cloth because of the hairs. Cordial with honey is not for babies under one year.
