Autumn menu

In short

  • The autumn kitchen eats what doesn't keep and stores what does: tomatoes and peppers first, then squash and cabbage, while potatoes and apples wait for winter.
  • A family of 3.1 AE eats roughly 8 kg of vegetables, 5 kg of potatoes, 6 kg of fruit and 2.5 kg of meat a week; there are fewer eggs.
  • One bird, three meals: a roast or casserole, a soup and a dish of leftovers.
  • Dried beans are soaked and boiled hard, and a bitter courgette or squash is never eaten.
  • On 1 November, count what goes into winter: cellar, crock, jars, freezer.
