In short
- Botulism: double vision, drooping eyelids, difficulty swallowing and speaking, weakness, no fever. Call an ambulance at once (999 or 112 in the UK and Ireland, 911 in the US and Canada), and take the leftover food with you.
- A suspect jar isn't tasted, not a drop. Bulging lid, bubbles, hissing, a sour or strange smell: throw it away, safely.
- The cold chain: fridge 4 °C (40 °F) or below, larder for food in fat below 10 °C (50 °F), freezer −18 °C (0 °F).
- Meat in jars only in a pressure canner, to the exact times. A water bath isn't enough.
- Food from fat and low-acid food from jars is heated thoroughly before eating.
- Honey and products with honey never for babies under 12 months.
